- Long ago the people used make different sorts of bread. They used make oaten meal bread, Indian meal bread, barley bread, boxties and potato cakes. The Indian meal was very course when it came first but the people sift it. They used take the fine part from the course part and the fine part used make beautiful bread and the course part was given to the foul. The boxty was made from potatoes. They used get five or six large potatoes and clean them and scrape them. When they boxty was made they used bake it between two cabbage leaves. They used usually when they used be going to bed. They used put it down going to bed and turn the asher up over it and in the morning it used be baked.They used also make potato cakes. They used make them from boiled potatoes.They used peel the, and bruise them and put a handful of oatenmeal through it. They used bake it on a hearth stone. They used also make oatenmeal cakes. They used grind the oatenmeal themselves with querns. Some people used send then oats to the mills and others used grind it themselves with hand querns.
