    In the month of January the pits are picked again and the seed potatoes are put by themselves to be cut when needed + the eating potatoes are put by themselves to be used. The names of the different kinds of potatoes are The Duke of York, Aran Banner, British Queen, Epicures, Snow Queens, + the Irish Champion.
    People make boxty bread out of the potatoes. The raw potato is grated + wrung to squeeze all the moisture out of it. This is mixed with boiled potatoes + flower and boiled. This is very nice with butter. Long ago the woman grated the potato specially for the moisture because when it is allowed to settle and the water drained off, a beautiful white starch remain behind in the vessels. This was used to starch linen shirts and collars and white caps.
