    baked the side of the cake that was leaned up against it. When one side was baked the other side was turned to the flag. This flag was called the Baking-Flag. If the people had not anything to eat for a fortnight before Christmas they would try their best to have something good for that time.
    Oat-meal bread is made int he following way. First the oat-meal is put into a basin and soft water is put on it to soften it. Then it is (put) flattened out in the form of a cake and it is left on the table until it gets a bit hard. Then it is put standing in front of the fire with a flag at the back of it to support it and it is left there until it is baked.
    Bread was baked every day except oat-meal bread.
    The marks that were cut on the top of the cake when made were the sign of the cross.
