- Potato BreadOne of the ways to make potato cake was as follows: Some good potatoes were boiled and when cooked, the ones that looked most 'floury' were peeled. They were bruised and mixed well with some flour. Some butter-milk was added and then the mixture was well kneaded. It was made rather stiff. When it was ready for baking, the top of the cake was marked in squares. It was baked on the griddle over the open fire (Those who make it now, bake it in an oven pot, covering the lid with the red coals which they call "greesha")The potato cake was cut in squares when it was baked and these squares were split in the middle.
