The raw potatoes were grated and mixed with the boiled potatoes which had been bruised. To this a little flour and salt were added and well mixed, then this was put on the griddle and baked. In olden times enough of bread was made to do a week or so at a time. A cross is always put on a cake in order to bake it in the centre.
