- (continued from previous page)the churning and the people of the house help at the work. The churning lasts an hour. The churning is done by the hand. The churn dash always moves upwards and downwards. People know when milk is churned when the butter comes up on the churn-dash. Some hot water is put in during progress; to help it to churn. The butter is lifted out on a large strainer. It is salted and made up in to bars and rolls. The butter milk is used for making bread. It is given to pigs; and the people drink it themselves. It is said that if a person comes into a house when milk is a churning they must give a hand at the churning. If not the butter wont come on the milk.
Before the milk can be churned it must be left to thicken into cream in large crocks covered with lids. Red carrots are sometimes used to give butter a yellow colour. They are grated fine with a grater and put through the butter. There are two handles on the lid where you can put on the lid easy.
Most people can only churn once a week in Winter. Because the milk is scarce in Winter and it is plentiful in Spring, Summer, and Autumn.- Collector
