- (continued from previous page)ANOTHER REASON FOR CHANGE of VENUEA dispute arose between the Waterford pig Buyers association and the Waterford Bacon factories that led to the withdrawal of the Buyers from the fairs.
NEW SYSTEM OF SUPPLY.In consequence of the dispute the Factories appointed agents (local) all through the districts who collected the pigs from the feeders and sent them to the factories direct.
In this way the monthly fair was left without Sellers.This system of local farmers setting up as Cattle jobbers is still in vogue in this Parish.
Some of them act as agents for the bacon factories whilst others go through the country and buy cattle which they ship direct to England.If the cattle purchased are not in good enough condition for direct export they take grass land at the letting periods and put the cattle out to grass until they are sufficiently fat for the English market.TOLLS. There is no record of tolls having been paid at Carrig fair which was held on the street and it is remarkable that such was the case as The Boyse family were the landlords of practically the whole district and although not regarded as being unduly tyrannical or unjust were never the less known to claim their pound of flesh when the occasion demanded it.(continues on next page)- Collector
