Some milk takes three quarters of an hour to churn or more, according to the heat of the weather.
There are two men or women at the dash,
pulling it up and down till churned.
When churned they take off the butter with a wooden plate into a trough, wash the milk clean out of it, then salt and wash it again. They then get the butter beaters and put it in rolls.
