- (continued from previous page)week, but in Summer, the cows give a big bucket of milk each, and therefore there is a churning twice or three times a week. When the milk is churned it is called butter-milk. Some of the butter-milk is kept for bread-making, and the rest is given to pigs and calves.
If it happened a stranger came into the house during a churning he would have to "take the dash" for a few minutes. If he did'nt he would be accused of taking the profit of the milk(continues on next page)- Collector
