- (continued from previous page)shut tight and twisted round until the cream turned into butter. Then the butter milk was taken off and the butter washed in four different waters and salted. In the winter when milk was scarse people need to put a small quantity of cream in a gallon or tea pot and rattle it round until the butter was formed then it was washed and salted.
