About fifty years ago when there were only a few roads in Dalkey a great many people had small farms. Some of them had only a cottage and a small field but they had poultry, pigs and cows in it. Most of them made their own butter and also made their own churns. The man of the house would get a barrel and clean it well. Then he would make a lid and put a hole in the centre. He would put the dash into the hole The people who had churns and no cows would buy milk form the big dairies and make butter. Paddy Fox 8th Class
