Flummery
In olden times when the people used to get their oats made into whole oaten meal it was their custom to steep some in their wooden pails and leave it for four or five days until the ingredients would get sour. They would then strain a quart of the juice of the meal and boil it and it used to make a very dainty dish called 'flummery'. They would boil it for a half hour and put sugar on it and eat it with a spoon. It was used for sick and delicate people and for young children.- Bailitheoir
