- The oldest churn that was in our house was a barrel one. It was about three feet in circumference. It was composed of several staves of timber held together with many iron bands. It is twenty years old. The various parts of the churn are the lid and the dash.
Butter is made twice a week in Summer and once in Winter. The woman of the house does the churning and if any stranger passing by comes in were asked to help at the churning. There was a superstition that they could take away the butter if they did not bear a hand. It takes much shorter time in the Summer than in the Winter.
To churn the butter the dash must be worked up and in the cream. When the handle of the dash is clear the butter is done. Hot water is pout on in the Winter time to make the butter come on(leanann ar an chéad leathanach eile)- Bailitheoir
