The principal kinds of bread were boxty, potatocake, and ponkogs or "poncoga". Potatocake was made by bruising cooked potatoes and mixing them with flour. Then the cake was cut into four triangular shaped piece caller "parlies" and baked on a pan.
Boxty was made by scraping raw potatoes on something rough and mixing the pulp with a little (for) flour. Then it was baked on a griddle.
Pankogs were made from indian meal mixed with flour and wet with water. The mixture was baked between two leaves of cabbage on a griddle.
