  1. Boxty is not made as much now so long ago. The ingredients are a few well washed potatoes half a teaspoon of salt, the same quantity of baking soda and a saucer of flour. The potatoes are peeled and grated into a basin. The soda and salt are then added and mixed together. The flour is then added by degrees and all well mixed together with a spoon.
    It is then baked on a well greased pan, like a cake till each side is brown and crisp. It is delicious to eat when warm.
