- (continued from previous page)if not milk, water was used instead. Then it was baked on a bread iron. This was a stand with three legs and it was put standing against the fire, and the cake was left against the bread iron.
Boxty bread was made also, but it was is very seldom made nowadays. At first the potatoes were scraped with a scraper and it was put into a cloth and squeezed, then it was taken out and put into a basin and a little flour was added, salt soda and pepper and it was baked in the pan.
Potato cake was made also and is made yet. Boiled potatoes are broken up and mixed(continues on next page)
