- (continued from previous page)and to help to churn. When the butter falls of the churn-dash the churning is finished. Water is poured in during the process as it helps churning.
The butter is taken out of the churn by hand, sometimes a wooden dish is used but very often the woman washes her hands and takes it out with her hands. It is then placed on a big wooden dish. The butter is washed with spring water and the washing is continued till all the cream is taken off the butter which means that it is washed at least three times. It is then salted and is then ready for sale.
The buttermilk is very valuable and is never wasted. Some of it was drunk at every meal what was left was given to the pigs or fowl. If a neighbor did not churn he could get a supply from the house where churning was done. It is used for baking. Buttermilk was an dis given to a cow that has murrain and she is cured.
