The milk remaining after the butter is taken off is called buttermilk. Buttermilk does the work of "cream of tartar" in the making of bread in the home. It is also drunk at dinner with potatoes and given as drink to calves.
(a) A stranger coming in while churning is going on must assist - otherwise he'd cause bad luck to the house. He must also say "Good luck to the work".
(b) If a person would ride around the house on a broom he'd take away the butter.
