    formerly. The marks used in the bread were crosses, and squares. This was done because it was supposed to raise higher. The vessel used for baking was a griddle. The griddle was made of metal. Bread was never baked in front of the fire against a support. The special kind of bread used in rare occasions was pea bread. The peas were boiled and water was added in kneading.
