    the grated potatoes and catching the juice in a shallow vessel. This was let stand in this vessel for ten hours or so when the starch held in solution fell to the bottom of the vessel and remained in a fairly hard mass. The water then on top was poured off and the starch made into a cake similar to the one above described.
    Potato cake was made of boiled potatoes The skins were removed and the potatoes bruised or pounded. To this was added a small quantity of flour and then kneaded, cut into flour farrels or parts baked on a pan over the fire, buttered on both side and placed on a plate one farrel over or on top of the other one.
