    During summer the potatoes are moulded. When the stalks are just beginning to show, more earth is put round them.
    Potatoes are usually fit for digging about July or August. When people are storing away potatoes they put them in pits. They put the potatoes in a heap in the field, then they cover them with rushes and put clay over that. Long ago people made their own starch. As it is now cheaper to buy it in shops they do not make it. First the raw potatoes were grated and put in a cloth, then it was squeezed hard and the
