    rubbed against the edge of the churn to take off the butter. The lid and dabbler are taken off and are washed down with cold water. The churn dash is washed down and left away. Two butter spades and a wooden dish is got and are scalded with boiling water.
    The butter is taken off with a small strainer and is left on the wooden dish. When the butter is all off the dash is moved up and down to collect all the little bits of butter. They are taken out with the strainer and left on the wooden dish. The butter milk is drained back into the churn and the butter is washed with cold water to take all the buttermilk out of it.
    A knife is drawn over and back through the butter to take the hairs out of it. Now the butter is salted and it is fixed into a roll with the butter spades.
