    the centre of it and a round piece of strong wood with several holes in it and a wooden handle in it called the "churn dash".
    When the cream is in the churn the dash is put down in the cream and the lid is then put in on the handle of the churn dash and a wooden "dabbler" put in on the handle to keep the milk from skiting. It is then ready for churning, and a person keeps churning with his hands up and down until the butter comes on top of the milk. If the milk is slow to come to a proper temperature to bring on the butter the person in charge puts a small quantity
