    The people with their hands moved the dash up and down through the milk.
    When the milk is churned they take off the butter and put it on a dish. Then they wash the milk out of it and salt it.
    Then they make it up in rolls and bring them to the market. Long ago the nearest butter market to us was in Sligo.
