- Boiled Boxty which is frequently made in this locality is usually made in the Winter months. It is prepared and set to boil as follows.The raw potatoes are peeled and grated with the ordinary tin grater made by the tinsmith. The mixture is put into a "boxty bag" and the water squeezed out of them. Those are put on an ordinary breadboard with three raised sides.Some boiled potatoes which remain after the dinner are peeled and mashed with a tin porringer.Over the fire(continues on next page)
