First a quantity of potatoes were got and washed and peeled.
After this they were grated. Next they were put into a muslin cloth and squeezed. The juice was used as starch.
The grated potatoes were then put into a "lossed" and mixed with a certain quantity of flour and wet with sour cream.
The mixture was then kneaded and made into the shape of a griddle cake and put on a hot greased griddle. It was left for say a quarter of an hour so and then turned and given the same time on that side. It was served hot(leanann ar an chéad leathanach eile)
