- Long ago the bread was made from oaten meal, wheaten meal and Indian meal. The flour was made locally from wheat. Some people remember to see querns but they never seen them used. The different kind of bread made are boxty bread, potato bread, oatmeal bread and many others.Boxty bread is made by gratten the raw peeled potatoes and when the potatoes are gratted they are wrung with a cloth and mixed with salt, flour and soda. Some people boil the Boxty and more fry it in an oven or on a pan.Potato bread is made with boiled potatoes, flour, soda and a little salt and baked on a pan.(continues on next page)
