    two or three days before it is sown. Each potato is cut into two or three parts with two shoots on each part. When the seed is cut it is called a "sciollán". The "sciolláns" are spread one foot apart. The drills are closed with a double-mould plough. During the Summer months the potatoes are cared for. When the stalks are keeping up they are earthed with a double-mould plough. The weeds are hoed off the drills with a hoe. When the stalks are strong they are scuffled and earthed again. When the stalks are flowered they are sprayed with blue-stone and washing-soda to prevent the blight. In Autumn the potatoes are dug with a potato-digger. The neighbours in the district help one another in picking the potatoes. The kinds of potatoes that are used in the district are. Epicures, Kerr Pinks, Arran Banners, Orange Chiefs, Irish Queens, British Queens, Windsor Castles, Dates, Beauty of Butes, and Flounders. Potatoes were used to make starch long ago. The potatoes were washed and grated. Boiling water was poured on them, and then it was strained and allowed to cool.
