The frog is the dish of the French man, John Bull he takes pride in roast beef
And amongst all the vines of the German, The sausage is ever the chief.
But Pat prefers something substantial, His relish can never be led.
From cabbage and spuds and a good bowl of cruds, and a nice bit of Irish pigs head.

Tis the dish that has ever proved whole-some, sure Irish men proved it before
When you taste it you'll eat till your finished
A then you'll be wanting some more,
And if ever I chance to get married I'll invite all the boys to a spread
There'll be lashings galore and Ill plce to the fore
A nice bit of Irish pigs head.
