- (continued from previous page)The ingredients used in making potato cake were potatoes, flour, butter, salt and carraway. Boiled potatoes were broken finely with the bottom of a saucepan or some other suitable article. The flour, butter, salt and carraway were then added. It was then shaped into cakes which were baked in a hot pan.
Sometimes when girls and boys are helping at potato digging they finish the day by making boxty which they enjoy with tea.Pupil - Margaret Towey
