- This how a boxty cake is made. The potatoes are washed well and the skin is taken off them and all the eyes are scooped out of them with a knife. The a strong piece of tin is got and holes are put in it and it is called a grater, the potatoes are then rubbed on the coarse side of the tin till they are grated.
Then they grated potatoes are put into a little bag and the water is wrung out of them and then they are put on a bread board and some flour is put on it and salt and milk and then they are all mixed together until they are thin and then they are baked on a pan, but the pan has to be warmed and butter put on(continues on next page)- Collector
