    salt and buttermilk. On some occasions when milk was scarce water was used for kneading. The cakes made with water were not as well tasted as those made with milk. When the cake was kneaded it was put on a griddle to bake. It was left baking for half an hour. Cakes were sometimes made of potatoes these were called potato cakes. The potatoes were boiled first, then when boiled the skin was peeled off and they were then cut in slices. The slices of potatoes were then mixed with milk and flour and put on a griddle to bake. Potato cakes took about three quarters of an hour to bake as they were usually larger than other cakes. Bread was usually kneaded with milk. Bread was sometimes made of oaten meal. The oats were ground into flour and kneaded into dough with skimmed milk. Indian meal was sometimes mixed through the dough so that the flour would last longer.
    When the cake was baked crosses were cut on top of it with a knife. This was done so that the cake would cool. Some people baked bread on a bastable but the majority of them baked on a griddle.
    At Christmas people baked a special cake, it was called the Christmas loaf. The ingredients used were flour, breadsoda a piece of butter
