- (continued from previous page)Some boiled potatoes were pounded and added to the raw potatoes, this was put on a bread-board and flour and a pinch of salt were added, all were well kneaded together and baked on a griddle or frying-pan.
Oaten pancakes were made as follows:- ¾ of lb of oaten meal was put into a clean bowl and a pinch of salt and soda, and a ¼ lb of flour was added. This was wet with sweet milk, until it was quite thin and left for a time until it burst. Then it was baked in a frying-pan or pot-oven.
An oaten-cake was baked every second day, and Boxty cake and pancakes were baked for Sunday or special occasions.
Cakes were marked with an X, or stabbed with a fork here and there. This was done to let the steam out.
The pot oven, the griddle, and the bread-stool were the means of baking used.
The bread-stool was like a riddle. It had a prop at the back, and you could made it stand up straight or let it slope a little by adjusting the prop.
The griddle was made of metal; it was quite round with two ears on it.- Collector
