- The old people used to make a lot of different cakes namely :- griddle cake, oatmeal cake, boxty, potato bread, and dumplings.
A quarter basin of oatmeal, a handful of flour and a pinch of salt were needed to make a griddle cake. They were all mixed up and boiling water was then added. All was then mixed up again and put on a board. It was then rolled out into the shape of a cake. A handful of oatmeal was then rubbed into the cake. It was thn left for an hour in this position and next left up against the griddle before the fire until it was baked. The griddle was supported with a stool or kettle.
