- In the olden days a certain kind of cake was made as a change from everyday fare. This cake was called "Boxty."Boxty was made with potatoes and flour and milk. The potatoes were peeled and grated. Then the potatoes were put into a muslin cloth and the starch was squeezed out of them.This starch was used for starching the fronts, collars and cuffs of shirts.When the starch was squeezed out of the potatoes they were kneaded together with a little flour and milk.They were then rolled out thinly and cut into squares. The cake was never baked whole.The cake was prefferred hot from the pan, with plenty of butter as an ordinary potato cake is to-day
