    The Epicures are an early variety. The most common to be found in this district are "Kerr Pinks" and "Victors".
    In olden times potatoes were used as starch. They were washed thoroughly and grated and the water squeezed into a vessel. When this water settles the starch remains on the bottom. Then there is boiling water poured in on it and it is ready for use.
