    First the creams was skimmed off the milk and placed into clean pans. Then they make a big wooden pounder with a long handle. The handle was put through a hole in the cover of the tub or churn. The lid was then clamped down and the handle was lifted straight up and down ever so many times until the cream began to thicken into butter.
    Salt was sprinkled through the butter when it was half tick in order to make it last better. There were some curious stories going the rounds about the butter.
