    time after the harvest. Some farmers dig them with a digging machine, others with spades. The potatoes are picked by the farmers family and sometimes by hired men. They are put in pits a few yards from the digging ground. About four ton of potatoes are put together and covered with grass or rushes. They are then covered with clay which is beat in with spades. The names of the local potatoes are, Kerrs, Pinks, Champions, Skerry Blue's, Aran Banners, and Golden Wonders. Very dry potatoes grow in this district. Potatoes were never used instead of starch.
