- We have no cow, but one day I saw a woman making butter. First you must seperate the milk from the cream, then the cream is left to get sour.
When it is sour it is put into the churn. Sometimes people put salt in the churn for luck. It was a churn about as big as a barrel of Guinnea's stout this woman had. Sometimes when a stranger come in while the churning is going on, the person has to churn for a while, or if not the butter won't gather. She was churning for about twenty minutes.
When she was finished she put water on the butter to wash the milk off it. Then she took it out of the churn and put salt in it. Then she took the water out of it with the clappers, and the butter was made.- Bailitheoir
