Coals are put under the churn so that the people or the evil spirits would not steal the butter. As it is said that it is stolen before sunrise on May morning. The people put cold water in the churn when the cream is cracking, and the way you would know when it would be cracking is you would see little grains of butter on it.
The butter is taken out of the churn with a wooden plate.
