- Long ago the people made flummery.
They got a crock of lukewarm water and put as much corn as it would hold in it and left it ten days that way.
At the end of that time it was sour. The thick part went to the bottom of the crock and the thin part when to the top.
They used the thin part as milk for eating the poridge and they boiled the thick part in a quantity of spring water for two hours.
When this was done it was taken out on a big plate.
They cut slices down off it and served it in small dishes. Sometimes they used milk with it.
