    we put on boiling water. This brings on the butter more quickly. Sometimes we scald (i.e. make it soft and white) the butter by putting on too much hot water and then we have to put on cold water. The butter is lighted out with a strainer after it is put into a wooden basin called a "trincher". Then it is washed until "the water runs clear". Next salt is put into it and it is mixed thoroughly with the spades. When this is done it is ornamented by a print and then put into a small wooden tub.

    We wet soda bread with some of the buttermilk and we give the remainder to the pigs and calves
