    The churning takes generally about an hour. It is worked by hand with a churndash. The churndash is worked up and down until the churning is made.
    The way the poeple know when the churning is made is when the dash comes up free from butter. Hot water is always poured into the chrun to bring on the butter and when the butter is floating on the top of the milk, the churn is raised on one side and rocked to gather the butter in one place. Then the butter is taken out with a strainer and put into a wooden dish and washed with water and salted and mixed with butter-spades.
    i never heard of any old sayings or proverbs connected with churning and butter-making.
    The butter-milk is used for making bread, and it is very wholesome for drinking. It is also given to pigs and calves.
