- Bread (Indian Meal)Bread was made from Indian meal called yellow-buck.
The meal was put into a basin, and boiling water from the kettle was poured on it, mixing well at the same time with a spoon a little salt was added.
It was then put on a board and worked well with the hands, made into a roll and flattened. While pressing down one hand had to be kept moving round the edge to prevent the sides from breaking.
A little flour was shaken on the board. It was cut into four parts and baked on a griddle. It was usually eaten with buttermilk or sour milk.
This bread was made to my knowledge at Brida, Glencar as late as the year 1906.- Bailitheoir
