After about a month the potatoes will apear over the ground. When they are a half foot over the ground the farmer puts the clay up to them, this is called "earthing" or "moulding" them.
In July the farmer digs the new potatoes and in the Autumn he digs out the main crop with a potato digger or with a plough. Sometimes the farmer hires men or women to pick the potatoes. The potatoes are picked into a kish and put into a cart and brough home.
Then they are stored into a pit. This pit is dug three feet wide. Then the potatoes are put in it, and covered with dry hay or grass. Then a thick coat of clay is put on them. This is both frost proof and air proof.
