Ar an leathanach seo
- (ar lean ón leathanach roimhe)is made about two - feet wide and a half - foot below the surface. Rushes are put at each side of it and the potatoes are thrown in between the two rows of rushes into the trench. They are covered overhead with rushes and sods and earth are then put on the [ oth] outside of the pit. The two sides of the pit slope towards each other and meet at the top like the roof of a house. This method prevents the rain from going through the sods as it slides down each side of the pit.
When all the potatoes are dug they are ''sorted'', that is the big ones are picked out and put into one pit. The small ones and waste ones are put into another pit and given to fowl, pigs and calves . The big ones are eaten by the people for their dinner with other vegetables and meat.
The different kinds of potatoes are:- Queens, Champions, Kerr - Pinks and Arran - Banners, Epicures and Flounders.
In this district Queens, Kerr Pinks and Arran - banners grow the best.
Potatoes were used instead of starch long ago, in this district, but they are not used as starch in this(leanann ar an chéad leathanach eile)
