When the potatoes are fully grown we weed them and then we dig them with the spade. Myself and my mother pick them and we put them in heaps in the garden. When the potatoes are finished digging they are chosen and the good potatoes are stored in pits and covered with rushes and earth.
The local potatoes are divided into two classes, early potatoes and the main crop. The early potatoes have lots of names, Bloomers, British queens, May queens, and Epicures. Others are the Irish queen, the Ker-pink, and the Shamrock. The Ker-pink grows best in this district. Starch was made from the potatoes long ago.
