Of course in modern times there was a more improved system. The churning was done by means of a windlass turning a combination of boards called beaters, which slap the cream back and forth for a considerable time until the butter is made.
When the buttermilk is all let out through a hole in the under part of the churn which is stopped by means of a timber plug. The butter is then washed with plenty of spring water, after which it is salted.
