- (ar lean ón leathanach roimhe)Boxty and potatoe cake were made every day and oaten bread was made once a week. there used to be enough made that would do the whole week. Potatoes, salt and flour, were used for potatoe cake. the potatoes were peeled and cut up into small pieces. then they were grated and the juice was squeezed out of them. Then flour was added and it was baked. It was much like potatoe cake. That was how boxty was made.
Starch was made from the juice of the potatoes.
