- (ar lean ón leathanach roimhe)adding a little milk and then baking on a griddle. Boxty-bread was made with raw potatoes and boiled potatoes. The raw potatoes were grated and mixed with the boiled potatoes which had been bruised. To this a little flour and salt were added and well mixed, then this was put on the griddle and baked. In olden times enough of bread was made to do a week or so at a time. A cross is always put on a cake in order to bake it in the centre. The name of the vessel in which the bread is baked is a pot-oven. Bread was usually baked before the fire in olden times. On Shrove Tuesday pan-cakes were made and currant cakes were made for Christmas.
